Recipe By mamacatnc PEANUT BUTTER FUDGE INGREDIENTS: 2 cups white sugar 3 Tablespoons white Karo syrup 2 Tablespoons butter or margarine 1/2 cup milk 1/8 teaspoon salt 3/4 to 1 cup peanut butter 2 Tablespoons butter or margarine 1 teaspoon vanilla PREP: Mix the sugar, syrup, margarin/butter, milk and salt in a heavy sauce pan. Heat on high heat until mixture begins to boil at edges of pan. Turn to medium low heat and boil gently until mixture forms a soft ball when a little is dropped in cold water. This mixture may take less than 5 minutes to cook. During this time stir very little, maybe 2 or 3 times. Remove from heat and add at once the peanut butter, butter/margarine, and vanilla. Stir the mixture with electric mixture, beginning on low speed. As the mixture thickens you will need to increase speed. Mixture will become very thick. When the mixture begins to hold the swirls from the beaters, it is almost ready. Beat as long as you can and still be able to pour from pan. Pour into a buttered pan or dish.
